EASY RECIPE..JUST IN TIME FOR EASTER!

Good Morning Everybody!! These are the cookies that I made for my open house at the shop. They are super easy and take no time at all to make AND you can use any flavor cake mix you want. Try Lemon (above) , Strawberry , and Coconut and look how pretty they all look on a platter...kind of like Easter Eggs!

COOL WHIP COOKIES...(YEP ...Cool Whip!)

One 8 ounce container Cool Whip
One box any flavor cake mix (not angel food!)
Two eggs
Powdered Sugar

Combine Cool Whip,cake mix and eggs and mix well. DOUGH WILL BE STICKY!! I find that if I chill it for at least an hour it really helps to handle it BUT it's not necessary. Drop by spoonfuls into the powdered sugar and coat evenly ...go crazy get alot on there.. then take and place them onto a parchement paper lined cookie tray and bake for 10-12 minutes at 350. Let sit for a few minutes on cookie tray then cool completely on wire rack! You will get about 36 of these little suckers!! DELICIOUS!

  8. Theses cookies are the best!!! I testify to that, I about ate the entire plate at Beth's Spring Open House, then I had to go back to the diet Dr this past week, hehehe! You all gotta make them!!

  9. Oh my goodness. I saw your picture of the cookies and thought... hmmm... how did she get a picture of MY cookies? HA! I have a very similar picture of the exact cookie. We call them soft lemon coolers and they are divine! The only thing different is I use one egg, but I can see where two might make it easier to incorporate the ingredients. That's the hardest part of this recipe--stirring it all together.

    I've tried it with orange and spice cake mixes. Very good. Will have to try strawberry.
